Today we are at Chopt, the best place to get a salad in NYC and ever since they added cauliflower rice, it is ten times better. Chopt had me going from “cauliflower is trash” to “Lemme get that bulk bag of cauliflower rice from BJ’s”. This is a combination is for you if you love cauliflower and spice. I call it

Braised Chicken Tinga
Cotija Cheese
Marinated Kale
Jalapenos
Pickled Red onions
Mexican Caesar Dressing
This combination is so mhm mhm mhm so good. The braised chicken is tender, juicy and succulent. The chicken Tinga, Jalapenos, and the Mexican Caesar dressing brings the heat but not too much. This isn’t tears inducing, nose dripping spice. But we can’t have just have spice. We need some complexity. That’s why we got the pickled red onions and cotija cheese. The cotija cheese brings the salt and the pickle red onions brings that sharp sweet tangy flavor. All these flavors come together and it just makes me want to do a little dance in my seat. But I won’t because social anxiety.
